Guacamole and Pico De Gallo!

Well… I had a themed birthday this year and it was a 90’s themed party!
It took around one and a half days to prepare for it, and it was definitely worth it.

I just realised I haven’t posted in over a year, and miss the frequent posting of what I ate and just random bits and bobs. I really hope I get to find some more time to make new recipes and take more photos so I can pots more often!

I made quite a lot on my birthday, so here’s the first post to my Birthday party series!

Guacamole:
-6 Avocados
-3 Limes
-2 Cloves of Garlic
-2 Thai Chillies (deseeded)
-1 Minced Onion
-Pinch of salt

-> All you need to do is mash up the avocados and mince everything else, mix it and let it sit. You should definitely make this the day before, so the ingredients can mingle, and the flavours can infuse together.

Pico De Gallo:
-8 Diced Tomatoes (remove the pulp/liquid/middle part)
-1 Minced Red Onion
-3 Limes (juiced)
-1 Minced Thai chilli

-> Again, you just want to chop everything up into tiny pieces (depends if you want it to be chunky or smooth)
->Cover it with cling film, and let it sit for at least 6 hours!

Hummus: 
-2 cans of Chickpeas
-1 tbsp of Peanut butter/Tahini (I used pb instead because I don’t like the taste of Tahini)
-3 tbsp of Olive oil
-1 Lemon, juiced
-1 clove of Garlic
-Optional: 1 tbsp of Sriracha 

->Open up the cans of chickpeas, drain and rinse through with a fine sieve
->Pour the chickpeas, garlic cloves and peanut butter into a food processor or blender
(If you use the blender, you may have to make it in batches or it won’t blend smooth enough)
->Blend the chickpeas until they’re smooth enough (until your preferred textured)
->Slowly drizzle in the olive oil and lemon juice into the food processor/blender
->Scoop out the yummy goodness with a spatula into your serving bowl
->If you want to add the Sriracha for an extra spicy kick, just mix it in now
->To store, put cling film over the bowl / put into a container box and store in the fridge
->This is best eaten fresh but it can store for around 5-7 days!

This fed around 12-15 people, and don’t forget to buy a few bag of Tortilla chips! If you have leftovers, you should totally treat yourself and just indulge in these dips.
